Carrot cake cupcakes
We baked carrot cake cupcakes with cream cheese and lemon icing. Yummm. Not bad for our first carrot cake. We collaborated a few recipes. Here's the recipe:
You Will Need (Makes 20 mini cupcakes)
1 cup Brown Sugar, 1 cup Veg Oil, 3 Large Eggs, Pinch Salt, 1/2 teaspoon Baking Powder, 2 cups Self Raising Flour, sifted, 2 cups finely grated Carrot, 1/2 cup Walnuts - finely chopped, 1 tsp Cinnamon, 1 tbs Orange Rind
Cream Cheese and Lemon Frosting
300g Icing sugar, 125g Cream Cheese - cold, 50g Unsalted Butter -room temp, 1 tbs Lemon Zest
Directions
Heat oven to 180c. Beat sugar and oil until thick, then add 1 egg at a time and keep beating for a few more mins. Add the rest of ingredients.Mix with wooden spoon until all combined. Bake for 15-18 minutes, or until light golden.

Friday night two thirds
For 2 months we've been wanting to go to Chocolate Bean because C had a relapse on the night of the half. I had to have my own regular soy latte and shared a large chocolate and gingerbread flavoured drink..wow was it huge. Sharing a brownie was a bad idea. I wanted more. I think we'll be baking brownies soon.

2012 Diary update: I feel bad, but I already found a new diary. It's navy, just bigger than A5 and 25% off. It's called the 'Cool Diary' by teNeues Verlag. A 'cool copy' of a Moleskine. Oh, and we saw Star Wars Moleskine journals. Pretty cool.

flourless choc hazel cake
C's ma found this flourless chocolate-hazelnut cake recipe in the paper a while ago and thought we would like to try this out since we have been trying to cook more lately.
It may look ugs but it was rated pretty high. Go us!

We went to The Griffens Head on Grenfel St. I had a shitzel, but the porterhouse parmi wasn't bad. I'll get that next time.

Homebrand self-saucing choc pudding
Pretty tasty!!
Ingredients - use as much Homebrand products as possible (serves 6): 2 cups self-raising flour, 4 tablespoons cocoa powder, 1 cup sugar, 160g butter, melted, cooled, 1 cup milk, 2 egg, lightly beaten, ice cream to serve
Sauce: 1 cup sugar, 4 tablespoons cocoa powder, sifted, 2 cups boiling water
Method: Preheat oven to 180°C. Grease an 16-cup capacity ovenproof baking dish. Sift flour and cocoa into a large bowl. Stir in sugar. Combine butter, milk and egg in a jug. Slowly add to flour mixture, whisking until well combined and smooth. Spoon into baking dish. Smooth top. Make sauce: Sprinkle combined sugar and cocoa over pudding. Slowly pour boiling water over the back of a large metal spoon to cover pudding. Place dish onto a baking tray. Bake for 35 to 40 minutes or until pudding bounces back when pressed gently in centre. Serve hot with vanilla ice-cream. Hint: Pouring the boiling water over a spoon prevents the water from disturbing the sugar mixture too much.

Good FOOD and wine show
So A and I with her fellow minions decided it would be a great idea to score some free grub while testing out some wine today. Trick is it wasn't free, so we had to eat our $18 worth. We watched celebrity chefs, Tobie and Ainsley. A waved her arms erratically when the host asked to see who wanted to come to the front on kind of special seating arrangement, which quote Ainsley looked like "the X factor" panel.
